Cookie Dough Bars
Who doesn’t love cookie dough? This batter is meant to be a no-cook dough, but be careful—it is highly
addictive! 😉 Great frozen or chilled as a bar, or paired with your favorite non-dairy vanilla ice cream. This
recipe was inspired by Veganricha.com
SERVES 4-6
INGREDIENTS
3 T Coconut butter, melted
Splash of Plant-based milk
2 t Vanilla Extract
3-4 T Maple Syrup
1/4 C Coconut Sugar
1 C Almond meal
1 C and a bit more of oats, finely ground
1/4 C Chocolate chips
Salt, pinch
INSTRUCTIONS
• Whisk all ingredients together to form a cookie dough consistency.
• Stir through, adding more oat flour as necessary and slowly stirring through chocolate chips.
• Line a high side tray with parchment paper and press down cookie dough into the pan.
• Chill in the fridge.
• When the cookie bars have firmed up, take a wet blade knife and cut away from the sides of the pan. Cut into bars.

ALMOND MILK
MAKES 3+ CUPS OF NON-DAIRY MILK
INGREDIENTS
1 cup raw nuts/seeds of your choice, soaked 10-12 hours in filtered water
3 cups water
INSTRUCTIONS
• In blender, blend all ingredients until smooth.
• Continue by pouring milk mixture into nut milk bag or cheesecloth. Squeeze out liquid.
• Store milk in fridge for up to 3 days, or make a large batch and freeze.
• As an option, you can dehydrate ‘nut pulp’ for 4-6 hours and store for future use in a sealed
container for nut flour.
• Serve milk with diced fruit and/or seed granola.
Pro tip:
Bake nut pulp in the oven on a low setting and turn into nut meal.

HOT CHOCOLATE
MAKES 2 LARGE GLASSES
INGREDIENTS
4 C your favorite non-dairy milk
3 T cocoa powder
1/4 C vegan chocolate chips
3 T maple syrup
1 t vanilla extract
Pinch of sea salt
Handful of mini vegan marshmallows
INSTRUCTIONS
• Warm chocolate chips and cocoa powder in a pan with the plant-based milk.
• Bring to a light simmer.
• Add maple syrup, followed by vanilla extract.
• Whisk together continuously, until chocolate chips melt.
• Pour into glasses and top with marshmallows.
