Here are 3 super easy vegan lunch ideas that would be great for any weekday. I made soba noodle salad, veggie quesadillas and simple peanut ramen. I didn’t measure anything out but here are the basic recipes:
Soba Noodle Salad:
-Chop up some cucumber, green beans and ginger
-Boil soba noodles until soft and rinse with cold water
-In a cup add some soy sauce, hot sauce, rice vinegar, sesame oil, ginger and lemon juice and mix together
-Put some spinach or lettuce in a bowl and top with the cold soba noodles. Then add the veggies and dressing and enjoy!
-Heat a pan on the stove and put a tortilla down
-Spread some butternut cheese sauce on the tortilla: https://pbpasta.com/2019/10/10/vegan-mac-and-cheese-nuts/
-Add some black beans, spinach, salsa and whatever else you like
-Put the top tortilla on and press down, then flip over to crisp
-Serve with salsa + avocado
-Cook your ramen noodles until soft and put in your bowl
-Sauté some green beans in sesame oil until soft and add to the bowl along with some spinach
-In a pan on medium heat add some sesame oil, peanut butter, ginger and soy sauce and mix together until smooth
-Add 2 cups boiling water and stir until smooth
-Pour over the noodles and enjoy!
