LENTIL/WALNUT NO-MEAT BALLS ⇣
3/4 cup lentils, cooked
1/2 onion
1/2 cup walnuts
1/4 cup panko breadcrumbs
1 tbsp ground flax
1/2 tbsp dijon mustard
1tsp minced garlic
1 tsp vegan worcestershire
1 tsp soy sauce
1 tsp parsley
1/2 tsp paprika
1/2 tsp thyme
1/2 tsp oregano
1/2 tsp liquid smoke
dash salt + pepper
INSTRUCTIONS – Place lentils, onion and walnuts in food processor and process until a clumpy mixture. Transfer to large bowl and add in the rest of the ingredients. Mix thoroughly. Form into balls. Refrigerate or freeze to firm at least 1 hr. Bake 25-30min at 375 degrees F. Makes approx 12 balls.
