Quick and Easy vegetable salad with a peanut dressing that goes very well with any vegetable salad. Can be made super fast and tastes delicious. The total calories in this dish is around 420 to 480 calories depending on the vegetables you add. It has roughly 14grams of protein.
Lettuce – 2 cups
Tomato – 1
Capsicum – 1/2 cup
Steamed vegetables of your choice – 1.5 cups
( I have used carrot, beans, potato & green peas)
Onion – 1/4 cup
A handful of mint leaves and coriander leaves.
For the dressing:
50 g roasted unsalted peanuts
1/2 inch piece ginger
1/2 green chilli
1 tablespoon lemon juice
Salt as required
1/4 cup water
Mix all together and the salad is fine. As simple as that. Do try it.
